Espumante de Portugal


Defining the concept of sparkling wine for Portugal using a range of native grape varieties:

  • Development of regional yeast strains (selection and production) that promote the concept of natural production as a differentiating factor;
  • Valorization of the product through the incorporation of good practices associated with Sustainability/Circular Economy, efficient resource/water management, allowing to capture the market of sparkling wines produced with fewer inputs, SO2 content, and simultaneously ensuring stability and aroma;
  • Promotion of the development and application of new digital technologies, using IoT, smart sensing, Artificial Intelligence, big data analysis, allowing innovation and entrepreneurship in viticulture, especially in terms of pressing and fermentation control, which provides replicability and coherence to the product;
  • Development of innovative methods in analytical chemistry and statistics for characterizing the geographical origin of sparkling wines and thus ensuring authenticity, and for characterizing the aromatic precursors and foaming capacity of grapes for sparkling wine;
  • Organizational innovation – new supply chains for sparkling wine/Developing a new business model with centralized production;
  • Elaboration of a strategy for the internationalization of Portuguese Sparkling Wine, Promoting training, demonstration, dissemination, and dissemination actions.
